Deep Dish Fruit Pizza

I tried a recipe from none other than PINTREST!!!!

Deep Dish Fruit Pizza- Of course there are many different variations of this but I liked the "deep dish" aspect of it.

Ingredients:
1 8oz cream cheese
1 16 oz cool whip
1 tube of sugar cookies
Fruit of your choice

I used 1 mini muffin pan and 1 regular muffin pan.  I rolled small balls of the sugar cookie dough and placed them in the muffin cups.  Bake as directed on the package. 



 When you first take them out of the oven they will be bubbled up but when they cool they will sink down and take a bowl like shape in the pan.  I liked using the paper cups so that when you put the toppings on it had additional side supports.

When the cookies are cooling; cut your fruit.  I used strawberries, blueberries and kiwi.  To be honest I'm not exactly sure how to cut a kiwi so I'm not sure I even used all of the kiwi that I could.

Next I prepared the frosting.  I did this last so the cream cheese had time to soften.  I just used a whisk and whipped the cream cheese until soft then whipped in the cool whip.  Make sure to use a bigger bowl for this because it makes alot!!!
Then put the mixture into a 1 gallon size plastic Ziploc bag and cut one of the tips off.  This creates an easy way to put the frosting into the cookie dishes.  I didn't use all of the frosting- I think if I would have used all large size muffin cups I would have, but with the mini cups you didn't use as much. 

Then top with your fruit.  Put back into the fridge until serving time!
